I had a water problem in the v-berth also. Turned out to be a bad gasket on
the windlass which is right above the v-berth. Water would leak in from the
shaft of the windlass when I would pull the anchor. The seal was a $3 part
from Defender which goes on the top of the windlass under the rope and chain
gypsies.
I also pull the v-berth mattress away from the wall when I leave the boat to
allow air to circulate on the "pointy" end of the mattress.
To clean up the mold and water damage from this leak, I took the teak
plywood out from the whole v-berth, cleaned it up and epoxied the back and
end grain to keep water out, No problems now.

Still getting to know the boat, recently was cleaning the Vee berth and
noticed spots of mold / mill dew on the underside of the mattress.
Any tips on first, cleaning? Second, minimizing the onset of mold. Boat is
in Everett, Washington where the rain and damp is very prominent.
